I speak with nutrition and protein experts Dr. Robert Hall and Dr. Justin Siegel about their research on this topic with the Periodic Table of Food Initiative. We also discuss what a global protein transition to plant-based proteins might do for the health of our planet and our bodies.

About Robert
Professor Dr. Robert D Hall grew up in Northern Ireland and was awarded a 1st Class Honours in Plant Sciences at the U of Edinburgh (1980). He gained a PhD in plant biotechnology and enzymology (Edinburgh, 1984) and has subsequently ca 40 years research experience, including 30 years in project / group management. He moved to The Netherlands in 1987 where he currently works at Wageningen Plant Research as Deputy Business Unit Manager Bioscience. He also holds a Special Professorship in Plant Metabolomics at Wageningen University. He is co-founder of the Netherlands Metabolomics Centre. He was on the Board of the international Metabolomics Society from 2008-2014 and was its elected President (2010-2012). He was awarded an Honorary Lifetime Fellowship of the Society in 2015. In 2018, he was awarded the Nils Foss Prize for Excellence in Food Science for his role in advancing metabolomics approaches in food science. He is scientific advisor / member of a number of (inter)national research committees coordinating research strategy and funding both in Europe and N. America. He is on the Editorial Boards of Frontiers in Metabolomics, Frontiers in Sustainable Food & Agriculture, Metabolites, and Metabolomics. He has completed over 220 publications of which ca. 75% are in peer-reviewed journals and he has edited 3 scientific methodology and reference books.
About Justin
Dr. Justin Siegel is an Associate Professor of Chemistry, Biochemistry & Molecular Medicine, at UC Davis in the Genome Center. He received his B.S. in Biochemistry from UC Davis in 2005 and his Ph.D. in Biomolecular Structure and Design from the University of Washington in 2011, after which he returned to UC Davis to begin his research lab. His scientific focus in the design and discovery of enzymes of interest to modern society. Through strong industrial and cross-disciplinary collaborations Dr. Siegel has engineered enzymes for a wide range of applications, including therapeutics development, natural product production, enhancing nutrient bioavailability, and fuel or chemical production. Dr. Siegel is co-inventor on >100 global patents and has >50 publications, as well as being a founding member of nine companies (Bio Architecture Labs, PvP Biologics, Digestiva, Peak B, Caffree, Vinzymes, PrismBio, Barnstorm Ventures, SFS Advisors), three international consortiums (Rosetta Commons Board, FoodShot Global, Innovation Institute for Food & Health), and two national consortiums (D2D Cure, AI Institute for Next Generation Food Systems). In 2023 Dr. Siegel was elected as a Fellow of the National Academy of Inventors.
